Tri-County Chapter’s Virtual Cooking Class Helps Local Food Bank

Led by “Head Chef” Terrance Davis of SchoolsFirst FCU and “Head Sous-Chef” Evelyn Davis of Wescom CU, those who attended the July 23 Tri-County Chapter’s virtual cooking class learned how to make a delicious meal and helped raised funds for local food banks.

Thanks to the Tri-County Chapter, some 37 “sous-chefs” on July 22 learned how to make their own delicious meal—virtually. And in the process, the group raised much-needed funds for a local food bank.

Led by “Head Chef” Terrance Davis of SchoolsFirst FCU and “Head Sous-Chef” Evelyn Davis of Wescom CU, those who attended the Chapter’s virtual get-together learned how to prepare spinach caprese salad, fettucine with sun-dried tomatoes and shiitake mushrooms, as well as easy lemon cake.

The event, hosted by Chapter Board Member Tina Covington of Altura CU, raised more than $500 for the Redlands-based Helping Hands Pantry. In addition, participants were entered in a drawing for prizes. Winners received kitchen- or cooking-related items. Wine and custom Cooking for Cause kitchen towels went to Julie Bjornstad of Altura CU, Camille Sidoti of Arrowhead CU, and Emmoline Segura of SchoolsFirst FCU. The grand prize winner, Cheryl Anderson of Wescom CU, received a 23-piece ceramic cooper cookware set. 

During the event, Chapter Board Member Linda Emmons, of Wescom CU, said: "I'm glad to see that in challenging times, our Chapter has pulled together to help maintain that true credit union spirit of 'People Helping People'." 

The Chapter already has another event planned: a Rubber Duck Race set for Aug. 29. Participants will purchase race ducks for $5 apiece, or $25 for a "6-quack".  Character ducks are available for an additional $2. The winning duck will receive the $250 grand prize. The money raised will go to purchase chromebooks for local schools. To purchase a duck, contact any Chapter board member or Linda Emmons at lemmons@wescom.org. The deadlne to purchase is Aug. 28 at 3:30 p.m.
